A Tasty Snack & A Wall Collage

I’m enjoying a tasty snack post-workout and doing a little Pinterest “ing” this Monday morning.

1 Apple

1 Tablespoon Natural Peanut Butter (softened)

1 Teaspoon Natural Honey

1 Dash of Cinnamon

Cut up the apple and drizzle the honey and peanut butter over the sliced apples. Add dash a bit of cinnamon on the top and Enjoy!

My Pinterest “ing” consists of adding more to my House Change board. I’m brainstorming on a few things for the new place. One thing I’m really considering is a collage wall. Either in the hallway or beside my desk, I’d love to gather a collection of white or black frames showcasing my favorite prints, quotes and maybe some of my own artwork. This is what Pinterest is inspiring me with!

A Spring Partaaay

With Spring in the air, my mind goes to party mode. What best way to celebrate Spring than with friends at the house! The yummiest part of a dinner party is the food. For my next party, I’m thinking a fun, finger food roam around the house style party. So of course, when I get my mind set on a party, I head over to Pinterest and start pinning on my Party! Board. What better way to let out all of my plans! Here are some of the best things Pinterest has given me for past parties we’ve had  – Plus a few things I have yet to try!


A delicious, refreshing punch of sorts! Stuff that punch with lime, rasberries, cucumbers, lemons and whatever else looks and sounds good!



Speaking of fruit… try out this fun presentation. It’s especially fun for a Thanksgiving look, but for Spring – just look at those colors! The crunch of the cone and the sweet and sour fruit. It doesn’t get much more delectable or  prettier than that!


Since we’re on a fruit roll, this will be at my next party. Doesn’t it just sound incredible. What a mix of flavors and incredible coloring! Spicy and sweet! Can’t wait to make this next!


Prosciutto on those little breadsticks that always appear in Glee. Seriously sounds amazing. A little protein and a bit of carbs.


Bruchetta. These were a huge hit at two different Christmas parties last year. Easy to make and they just melt-in-your-mouth!


For a sweet fruit dessert, try these mini strawberry cheesecake deserts. Easy to make and oh so delish!


So maybe I’m lacking on protein, but would you come to a dinner party serving these finger foods? Seriously! They all sound perfect on this warm Spring day! Pretty Face, It’s A Beautiful Day

Okay, seriously! Have you checked out the newest Michael Bublé album? It’s fabulous! Of course being a fan since, I don’t know.. middle school, there was a great chance I’d fall in love with this one too. It’s A Beautiful Day is perfect for this sun shiny afternoon. I’ve got the windows open streaming sunlight in the house and it’s NOT snowing! What! I didn’t know blogging on a NON-snow day was even possible. I’m not complaining. I took a nice walk to Whole Foods and stocked up on dinner items for tonight! That’s another thing making this day so much better. Matt is finally done with busy season. So… it’s back to a normal dinner schedule, TOGETHER no less! What a thought! Tonight on the menu is Spinach & Feta Stuffed Chicken, fresh Papaya and a delish Greek Garbanzo salad. Mmm… now to start cookin’ it!

This Boy is Back.

Today is Tax Day. This, for an accountant, means from now on, Saturdays are the weekend again, 14 hour work days are in the past and life can be normal again. For me, the accountant’s wife, I’m looking forward to dinner together at a normal time, Saturday date days and not being completely exhausted on our only day together without work or school. Busy Season takes a toll, that’s for sure. But I am so proud of my amazing man for getting through it. It is not for the weak in spirit and he crushed it! He even started us on a new goal. A Matt Goal as I call them. Our new goal is one dessert, once a week. We like desserts. So, last night being the last day before our goal starts, we got frozen yogurt before midnight. One. Last. Dessert.

And today, I was craving a sweet snack. So, I made up a healthy one. It was a-mazing! Try this – Half a frozen Papaya smoothie box from Whole Foods or any frozen fruit. A half cup of plain Greek yogurt. Sprinkle a bit of Agave Nectar and Blend. Papaya Ice Cream – healthy and sooo delish!

It’s called Pinterest. Heard of it? Most of us have. Well, I’m just a little obsessed. It’s a magical place to organize thoughts, wish lists, party plans and future dreams. It’s amazing. So, since I’ve failed at blogging during the break, but can’t stop pinning everything on my mind… Check my Board out here.

Recipe for Delicious

Naan Pizza, That’s All.



Naan Pizza. Ever had it? You should. I found the recipe via Food Gawker. Best. Website. Ever.

WARNING: Food Gawker may cause your mouth to water!

Or it may lead to an incredible Saturday lunch.

So, how can you make Naan Pizza. First, gather your ingredients.

Whole Wheat Naan, all of your toppings – whatever your faves are. Then set the oven to 350 degrees.


Grab a pack of whole wheat Naan at any grocery store. Mine is from Whole Foods.

Then look in the cabinet for your favorite spaghetti sauce. I love Giada’s Tomato Basil. Cover the Naan in a thin layer.

This sauce is incredible. Found at Super Target.

Safeway has these perfect little packages of mini sweet peppers. Cut up as many as you’d like. I did three. They taste delicious and add the perfect amount of color.

Cut up a quarter of a red onion, or as we call them, purple onions. Sprinkle the peppers and onions on top of the sauce.

Sprinkle away.

Grab your favorite italian style seasonings and put them over of the sauce and toppings.

This cheese was delicious. Although I don’t normally buy cheese THIS Mozzarella cheese – I go for cheese made with skim milk or lower fat cheese. The Hubby picked this one out. Sprinkle however much you’d like on top.

Pop it in the oven, set the timer for ten minutes and enjoy!!

Easy and perfectly delicious.

Cupcakes & Avocado





The perfect Saturday included breakfast with friends, a bike ride and yummy cupcakes from Cuppycakes of Cherry Creek. That mash of red and green was our dinner. Avocado naked turkey burgers and a delicious salad. Perfect meal to end the day. This day couldn’t have been better.

We’ve been on a busy streak! Thursday night I got to spend time with my best friend, Heather. We ate, shopped and caught up on our lives! I missed that girl! Friday we got together with Matt’s cousins (Brittany from Thursday’s guest post) at the Broadmoor for breakfast. We had such a great time seeing each other! Then that night we had a blast with a group of friends eating Pho and just laughing like crazy.

So, that’s the last few days in a nutshell! Now we’re off for a late night run! How was your Saturday?
